10 min paneer biryani

I was thinking of preparing an instant biryani and I also had home made fresh paneer with me. Let’s see how to make quick aromatic biryani instantly.

Ingredients:

  • Fresh paneer( or frozen)-500 gm
  • Basmati rice(பிரியாணி அரிசி) – 2 cup
  • Shallots(பெரிய வெங்காயம்) – 2 medium sized
  • Green chilly(பச்சை மிளகாய் ) – 4
  • Turmeric powder(மஞ்சள் தூள்)-1/2 tspn
  • Garam masala(கரம் மசாலா ) – 1 tspn
  • Chilly powder(மிளகாய் தூள் ) – 1 tspn
  • Coriander powder(மல்லி தூள் ) – 1 tspn
  • Biryani masala(பிரியாணி மசாலா ) – 1 tspn
  • Bay leaf(பிரியாணி இலை ) – 1
  • Cinnamon(பட்டை) – 2 sticks
  • Cloves(கிராம்பு) – 3
  • Cardomom(ஏலக்காய்) – 3
  • Anise seed(அண்ணாசி) – 1
  • Coriander leaves(மல்லி இலை)
  • Curd(தயிர்) – 1 tbspn
  • Coconut oil(தேங்காய் எண்ணெய்)
  • Ghee(நெய்)
  • Cashews(முந்திரி)
  • Raisins(திராட்சை)
  • Lemon juice – half spoon
  • Salt – as your taste
  • Sugar -1 tspn

Method:

  • Soak the rice for 20 to 30 minutes.
  • Cut onions vertically and keep ready
  • Slit green chillies into two.
  • Chop Coriander leaves.
  • Take all the other ingredients and get ready.
  • Take a pressure cooker.
  • Once the cooker gets hot add a tbspn of coconut oil and ghee.
  • Once the oil gets hot, add bay leaf, Cinnamon, cloves, cardamom, anise seed.
  • Then add the cashews and raisins and fry it till golden brown.
  • Then add the onions and green chilly.
  • Saute till golden brown.
  • Add the Coriander leaves and saute few seconds.
  • Now add chilly powder, Coriander powder, Garam masala, turmeric powder, biryani masala.
  • Saute for a minute. Now add a tbspn of curd and mix well.
  • Now add half a tspn of sugar.
  • Now add required amount of water. (for Basmati rice use 1:2 proportion rice : water).
  • Allow it to boil. Once the bubble comes out add in the paneer and soaked rice and once again allow it to Boil for a minute.
  • Once it boils add half a spoon of lemon juice.
  • Now close the cooker lid and wait for 2 whistles.
  • Then turn the flame into simmer.
  • Wait for 5 more minutes.
  • Switch off the flame.
  • Then wait until the cooker cools down all by itself.
  • Then open and serve hot with onion raita.

May be the steps are long. But it gets ready in 10 minutes.

We had a get together yesterday and since they were vegetarian I thought of opting mushroom for the lunch buffet.

So the first option in main course was mushroom biriyani . I always wanted to try the mushroom biriyani prepared in weddings. So gave a try it came out so beautifully.

To saute:

  • Mushroom(காளான்) – 500 gm
  • Shallots(பெரிய வெங்காயம்) – 2 medium sized
  • Tomato(தக்காளி) – 1 large
  • Bay leaves(பிரியாணி இலை) – 1
  • Cinnamon(பட்டை) – 2
  • Cardomom (ஏலக்காய்) – 4
  • Cloves (கிராம்பு) – 3
  • Star Anise(அண்ணாசி பூ) – 1
  • Cashew(முந்திரி) – 8
  • Raisins(திராட்சை) – 10
  • Curd-1 tbspn

To grind:

  • Ginger (இஞ்சி) – 1 inch
  • Garlic cloves (பூண்டு) – 5 cloves
  • Pearl onions(சின்ன வெங்காயம்) – 8
  • Green chilly(பச்சை மிளகாய்) – 4
  • Cashews(முந்திரி) – 50gm
  • Grated coconut(துருவிய தேங்காய்) – 2 tbspn
  • Cinnamon (பட்டை) – 1
  • Cloves(கிராம்பு) – 2
  • Cardomom (ஏலக்காய்) – 3
  • Fennel seeds( சோம்பு ) – 1/2 tspn
  • mint leaves(புதினா) 1/2 cup
  • Coriander leaves(மல்லி இலை) -1/2 cup

Shallots – 1 large sized for fried onions

Seeraga samba rice( சீரக சம்பா அரிசி) -2 cups

Methods:

Take all ingredients and keep ready. Soak the rice for half an hour.

Grind all the ingredients under to grind in a mixer to a fine paste.

Now take a pressure cooker.

Add two tbspn of ghee and two tbspn coconut oil.

Once the oil heats up, add bay leaf, cinnamon, cloves, cardomom, anise seeds, then cashews and raisins.

Once all get fried, add onions and saute till golden brown.

Then add tomatoes and saute till mushy.

Next add the grind paste and curd and saute till oil separates.

Next add halved mushrooms and saute for 2 minutes.

Then add the well soaked Seeraga samba rice and water ( I used 2:1.5 proportion of water) and required amount of salt as per your taste and then add handful of coriander and mint leaves.

Close the cooker lid and wait for 1 whistle and simmer down for 5 more minutes. Then switch off the flame. Wait till all the pressure go by itself.

In the meantime deep fry the shallots for fried onions. Once you open the lid transfer it to another wide vessel( this will avoid over cooking of rice because of the cooker heat) . And garnish with fried onions.

Yummy mushroom biriyani is ready to be served with onion raita.

Hope you all are having a good day. Yesterday night I thought of making ulunthu sadham as dinner. I am a native of nagercoil. I am not sure of other districts but there I have seen that when girls attain their puberty relatives make this ulunthu sadham along with egg aviyal and mutton gravy. Ulunthu i.e urid Dal is very good for strong bones development. I prefer to use black urid Dal. Always the original version will be better than polished one right???

Girls get weak during their periods and having dishes made of ulunthu will give them strength and help them get relief from stomach aches.

Also give this food to pregnant ladies this help brain and bones development for the fetus.

Try to include urid in your kids regular diet which provides all nutrients and strengthen the bones.

Ingredients :

  • Rice(normal rice you cook) – 1 cup
  • Black urid dal-½ cup
  • Cumin seeds-1 tspn
  • Garlic pods-8
  • Fenugreek seeds-½ tspn
  • Grated coconut-½ cup

Method:

  1. Wash and soak rice for half an hour
  2. Wash black urid dal properly and soak for half an hour.
  3. Take cumin seeds and garlic pods and crush a little in either mixing jar or idikal
  4. After half an hour, take all the ingredients in pressure cooker and salt as your taste.
  5. Wait for 5-6 whistles and switch off the cooler. Let it all cool down by itself.
  6. If u need as Kanji you can add little hot water to it or can eat just as it is.

Optional

Coconut is only optional. Coconut enhances the flavor and taste. You can add as per your taste.

Take garlic pods and cumin seed to crush.

Take all ingredients in pressure cooker and add salt to taste.

Wait for 5-6 whistles and then switch off the flame.

There it is ready to serve!!!!!
