Egg aviyal

Hello,

Told you know I ll be posting my recipe for egg aviyal here it goes.

Name: egg aviyal

Cuisine: Indian

Ingredients:

  • Egg- 3 to 4
  • Drum stick – 1
  • Coconut oil – 2 tspn
  • Salt – to taste

For saute:

  • Onion – medium sized 1
  • Green chilly – 4
  • Curry leaves
  • Mustard seeds
  • Chana and urad dal

For grinding:

  • Grated coconut – 1/2 cup
  • Cumin seeds – 1 tspn
  • Black pepper – 1/2 tspn
  • Garlic pod – 1
  • Pearl onion – 2
  • Dry chilly – 2

Method:

  1. Boil the eggs by adding a pinch of salt.
  2. Boil and cook the drumsticks by adding little salt.
  3. Slice onions and slit green chillies.
  4. Put all the ingredients under grinding into mixer jar and grind into coarse paste by adding little water.
  5. Now in a vessel add coconut oil.
  6. Once the oil gets hot add Mustard seeds and Chana urad dal. Add curry leaves.
  7. After the Mustard crackles add in onion and green chilly. Saute it till translucent.
  8. Add in the ground paste along with slit eggs and cooked drum stick.
  9. Add salt as needed.
  10. Mix all slowly so that eggs don’t break.
  11. Let it cook for 5-10 minutes in simmer.
  12. Egg aviyal is ready to be served.

This dish is a best combo with ulli theeyal, Ulunthu sadham.

Boil the drumstick

Take all ingredients under grinding to mixer.

Grind to coarse paste. Now in a pan add oil, Mustard seeds, curry leaves, Chana urad dal, onion, green chilly.

Add the ground paste then boiled egg and cooked drum stick.

Allow to cook for 5 to 10 min instead immersed till the raw smell of the paste go. The dish is ready!!!!!!
