Pulikari/olichootan/coconut Kuzhambu

I think it is a royal dish of Nanjilnad. I have never seen a day without this Kuzhambu in our lunch menu in our home. It is an easy recipe too. You can prepare this with different veggies and name it accordingly.

Ingredients :

To grind:

  • Grated coconut(துருவிய தேங்காய்)-1 cup
  • Pearl onions(சின்ன வெங்காயம்)-6
  • Garlic(பூண்டு)-2 pods
  • Cumin seeds (சீரகம்)-1 tspn
  • Chilly powder (மிளகாய் தூள்)-1 tnspn
  • Turmeric powder(மஞ்சள் தூள்)-1/2 tbspn
  • Tamarind(புளி) – lemon sized
  • Salt(உப்பு)

Seasoning:

  • Mustard seeds (கடுகு ) – 1 tspn
  • Fenugreek seeds (வெந்தயம்) -1 tspn
  • Curry leaves(கறிவேப்பிலை)
  • Shallots(வெங்காயம்)

Method:

Take all the ingredients.

Grind all the above to coarse paste(மேலே காணிக்க பட்டுள்ள அனைத்தையும் விழுதாக அரைத்துக் கொள்ள வேண்டும்.)

Add the tamarind pulp( புளி தண்ணீர் ஊற்றவும்.)add salt(உப்பு சேர்க்கவும்)

Allow it to boil. A lather should form above. It should not boil like other gravies. (அதை அடுப்பில் வைத்து கொதிக்க விடவும். மேலே நுரை போன்ற பதம் வரும். உடனே அடுப்பை அணைத்து விடவும்).

For seasoning, in a sauce pan, add a tbspn of coconut oil.(தாளிப்பதற்க்கு, oru கடாயில் சிறிது தேங்காய் எண்ணெய் ஊற்றவும்).

Add mustard seeds. (கடுகு சேர்க்கவும் )

Add fenugreek seeds. (வெந்தயம் சேர்க்கவும்)

Add Curry leaves(கறிவேப்பிலை போடவும்)

Add chopped onions(நறுக்கிய வெங்காயம் சேர்க்கவும்).

Add the seasoning over the Kuzhambu. (தாளிப்பை குழம்பின் மேல் ஊற்றவும்).

Serve and enjoy.!!!!!!
