My all time favorite dish that hat I would like to have an extra plate and that never allows to me follow my diet is puri and puri Masala.
The puris become more fluffy only if the oil is really hot. And the thickness of spreader puri should not be too thin neither too thick.
Allow the dough to rest for 20 minutes in closed container. This allows the dough to become extra soft.
- Atta flour
Take 2 cups of atta flour in a wide vessel.
Add salt as per your taste. Add 1 cup water little by little and continue mixing while adding water.
Then add little ghee and oil. And then knead the dough till smooth and soft.
Knead and beat the dough in a neat floor.
Allow to rest for 15 to 20 minutes.
After 20 minutes, divide into small balls.
Take a small ball and dust it with little atta.
With the rolling pin, roll into small rounds.
In a wide vessel, heat oil for deep frying.
When it becomes really hot, slowly dip the flattened puri into the oil and lightly oat on it.
Flip it over the other side.
Fluffy puris are ready. Serve it with puri Masala.
